One Dish Recipe for Brunch Casserole with Eggs, Hash Browns and Ham
This brunch casserole with eggs, hash browns and ham is perfect for spring gatherings or mothers day brunch. And the best part is that this one dish casserole combines everyones favorite breakfast foods all in one simple dish.
Brunch Casserole with Eggs, Hash Browns and Ham Ingredients:
2 cups diced ham
1 tablespoon butter
1/2 vidalia or red onion, chopped
4 cups frozen hash brown potatoes, thawed
6 eggs
2/3 cup milk
1 1/2 cups shredded Cheddar cheese
Salt and pepper to taste
Instructions:
Lightly grease a 9x13 dish. Brown the onions in the butter. Stir eggs, milk and 1 cup of cheese in a bowl. Mix in hash browns, browned onions and ham. Pour into the casserole. Bake at 350 for 40 minutes or until middle is set. Sprinkle with remaining ½ cup of cheese. Bake 5 minutes more. Remove & let stand a few minutes before serving.
Tip: If preparing this brunch casserole with eggs, hash browns and ham the night before, cook 20 minutes longer.
