Fresh Salmon and More Kid Parties

Fresh Salmon Recipes
The guys just got back from a salmon fishing trip and brought back A LOT of fresh salmon. The biggest fish caught was 20 lbs. and they caught a total of 7! Since they fished with (and split the fish with) the Webers, we had a salmon recipe cookoff the night they returned. Wendy chose a variation of Karen's sweeter recipe and we used Uncle Don's recipe. They both turned out great and not-at-all fishy.

Sweeter Recipe - Maple Glazed Salmon Recipe
4 (6 oz.) salmon fillets or 2 (12 oz. in our case)
3 t. paprika
3 t. chili powder
1/2 t. ground cumin
1/2 brown sugar
1 t. sea salt
cooking spray (we prefer PAM!)
2 t. maple syrup

Rub fish with sea salt and sprinkle with remaining dry ingredients. Spray grill with cooking spray. Grill fish about 7 minutes. Drizzle syrup on fish. Grill another 1-4 minutes until fish flakes easily when tested with a fork.

Tangier Recipe - Mayo Soy Salmon Recipe
4 (6 oz.) salmon
1/2 cup mayo
1/4 cup brown sugar
1/4 cup soy sauce
Cooking Spray

Stir together. Spread on salmon right before cooking. Spray grill with cooking spray. Grill 7-12 minutes depending on the size of the fish. Should flake easily when tested with a fork if done.

End of Summer Kid Party - a Beach Bash for Boys
Since my daughter is having a Cheetah Girls party on Friday, my son decided to have a beach bash with his friends. Swimming, tubing and pizza will be the agenda for the day. It's so nice to get the gang together for gatherings that don't result in excessive gifts for the birthday child. This is just for the fun of it. Hoping for a nice day otherwise we'll be playing a lot of Wii games inside!
